This is my adaptation of a recipe in the book Bean Cookery by Sue Deeming, ©1980. It is so good it needs to be shared. :)

Number of Servings: 16

Ingredients

    2 T butter
    ⅛ c onion, chopped fine
    1 c white beans
    1 t salt
    2 t dill weed
    1T yeast
    1 c warm water
    1 T sugar
    4 t vital wheat gluten
    3 c white flour

Directions

Puree beans in food processor or blender. You can use a small amount water, if necessary (subtract the amount from the yeast water). Saute onion in butter until tender. Add beans, salt, and dill; heat through, then remove from heat and cool.

Soften yeast in warm water. Stir into bean mixture. Add sugar. Add gluten and 1 cup of the flour and mix with electric mixer for 2 minutes.

Add remaining flour; knead until smooth and elastic. Let rise and punch down at least once (I prefer twice).

Form into loaf and let rise until double. Bake at 350° for 40 minutes or until done.
