Number of Servings: 6

Ingredients

    4 cups turkey - chopped into small pieces
    3 Tbs. butter - I used 'i can't believe it's not butter'
    1/2 C. chicken broth
    1 C. skim milk
    1/4 C. flour
    1/4 C. sweet red peppers - chopped
    1/2 C. frozen corn
    1 C. long grain rice - measured before cooking. 1/4 C. is the cooked serving size.
    salt and pepper to taste

Directions

Melt the butter in a large pan over med. heat melt the butter, add the flour and mix. Slowly add the milk and chicken broth, the first part is like making gravy keep stirring it you don't want to have it get lumpy. As it heats up it will thicken. I had to add a little more flour but each time it can be different. Once it gets to a good gravy like consistency you will add the turkey , peppers, and corn. then let it all get warm. I cooked the rice at the same time as I was making the sauce. Put the turkey and sauce over rice. Makes 6 servings.
You can add in other veggies but my family is very picky.
