Ingredients


    6 strips lean bacon
    360 grams turkey (boneless, skinless breast)
    1/4 cup small diced, blanched potatoes
    1/4 cup small diced, blanched squash
    1/4 cup small diced, blanched pumpkin
    1/4 cup small diced celery
    1/4 cup small diced onion
    1/4 cup small diced pear
    1 cup cubed white bread
    1 tsp. summer savor
    1/2 tsp. dried sage
    50 grams butter
    salt and pepper

Directions

Cut strips of bacon in half and reserve. Cut your turkey into 12 even pieces and pound gently into little disks (*See note below). In a 20 cm Paderno fry pan, place onions, celery and butter over medium heat. Cook gently until onions begin to become translucent. Add pear, savory and sage and cook for 1 more minute. Add all remaining ingredients and mix well. Allow dressing to cool for a couple of hours. Place a small spoonful of dressing on each turkey medallion and wrap by folding in the ends and rolling like the end of a cigar. Place this on one of the half strips of bacon and roll it up. Secure with toothpick. Place on an Au Gratin dish or baking sheet. Place in a 375 degree oven for 5 minutes or until bacon is cooked. Serve individually with a splash of cranberry-pumpkin seed vinaigrette or if you do not have this, a bit of cranberry relish.

* Chef's Note: Lay a piece of plastic wrap over the turkey before you pound it to avoid splattering.
