Number of Servings: 4

Ingredients

    4 salmon fillets or steak (135g each)
    2 cups fish or chicken stock
    1 tbsp light soy sauce
    1 tbsp lime or lemon juice
    4 tbsp low-fat ricotta cheese
    1 tsp poppy seeds
    2 steamed and chopped bunches of spinach

Directions

1. Bring stock to boil in a pan that will just fit the salmon
2. Add salmon, return to the boil, cover and turn off the stove
3. Leave to poach for 5-7 minutes without lifting the lid
4. Remove and drain on paper towels.
5. Place a mound of chopped spinach on each plate. Top with salmon
6. Mix soy sauce and lime/lemon juice together and pour over salmon
7. Blend ricotta cheese and poppy seeds and divide dollop on top of salmon
8. Warm for 30 seconds in the microwave

* Try serving with snow or sugar snap peas
