Introduction

I came up with this recipe to lighten up one of my favorite meals quiche with a cup of soup. You really only taste the broccoli and Cheddar!! Number of Servings: 4

Ingredients

    1/3 Cup bread crumbs
    3 Egg whites or 1/2 cup egg substitute
    1 Egg
    1 1/2 cups evaporated skim milk
    1 1/2 cups broccoli cooked
    1 cup shredded low fat cheddar cheese
    1 1/2 cups spaghetti squash
    1 medium chopped onion
    salt and pepper to taste

Directions

Spray 9" pie plate with cooking spray. Sprinkle bread crumbs and tilt dish until coated. Beat egg substitute and egg, add remaining ingredients and pour into prepared pie plate. Bake 350 degrees for 50 minutes. Makes 4 large servings. You can cut serving in half and serve with soup or salad.
