Introduction

A tasty lower fat/lower calorie soup for those cold winter nights. To make it healthier you can remove cheese! A tasty lower fat/lower calorie soup for those cold winter nights. To make it healthier you can remove cheese!

Ingredients

    1/2 head of cauliflower cut up
    bunch of broccoli cut up
    onions diced
    garlic minced
    5 cups ofchicken broth
    1 can of fat free evaporated milk
    2 oz of velveeta cheese cubed
    optional cheese to top off soup once served

Directions

Chop garlic, onions and saute in stock pot; add 5 cups of chicken broth; then cauliflower and broccoli; boil then simmer 20 min; take out 1/2 of veg and blend= return to pot, bring back to boil; then simmer; add velveeta and fat free evaporated milk and stir in; simmer for 10 min and serve; yummy
