Less than 5 minutes to a yummy, satisfying treat. Substitute whole grain for white flour, use less sugar, substitute half of the eggs for juice or milk, omit walnuts.... it'll always turn out! Ingredients

    500 g apples (approx. 2 very large ones)
    1/2 cup chopped walnuts
    2 cups flour (white or whole grain)
    1 cup sugar (or less or sugar substitute)
    2 tsp vanilla extract
    1 tbsp baking powder
    1 tbsp cinnamon

Directions

Preheat oven to 320 degrees F.
Mix all the ingredients except apples and walnuts in a bowl (dough will be slightly crumbly).
Core and chop apples into small chunks.
Add apples and walnuts to dough.
Fill into a nonstick loaf pan.
Bake for 45 to 50 minutes.
Makes a big (!) 9x5 loaf.
