Introduction

Million times better than Eggo. I make a bunch, freeze them, and then pop them in the toaster for a quick breakfast. I use canola oil but the original recipe called for 6 tbsp of butter. Ingredients

    flour, 2 c
    baking soda, 1/4 tsp
    baking powder, 1 1/2 tsp
    sugar, 1 Tbsp
    salt, 1/2 tsp
    eggs, 2 (separated)
    buttermilk, 1 3/4 c
    canola oil, 2 1/2 Tbsp

Directions

Sift dry ingredients together.
In a separate bowl, mix egg yolks, buttermilk, and oil.
Combine the dry and liquid ingredients.
Beat egg whites until stiff.
Fold whites into batter.
Cook as directed in waffle iron.
