Introduction

Ingredients

1 cup flour
1/4 c. brown sugar
1/4 cup granulated sugar
4 TBS country crock light melted or any light margarine
1 cup carrots grated.
1 tsp baking powder
1 tsp salt
1 whole egg
1 egg white
1 tsp cinnamon
Directions
Preheat oven to 400
In a med mixing bowl combine flour, sugar, salt, baking powder, cinnamon mix with wire wisk.
In a seperate bowl melt margarine then add egg and egg white and beat together.. (you can also just use 3 egg whites or egg subsitute)
Add wet to Dry and stir just til combined. Dump in carrots and mix til combined put in an 8 by 8 inch pan and spread out. Cook For 20 -25 minutes or until golden brown and toothpick comes out clean.
This recipie took me some adjusting to get it right.. I am sure humidity plays a big part in it. If your batter seems to dry add a little fat free milk.
I hope you enjoy. Its not as sweet as carrot cake but it sure makes a great healthy dessert.
