Ingredients

    Corn (fresh, canned or frozen)
    Black beans (canned)
    Red onion
    Jalapeno pepper
    Olive Oil
    Lime
    Parsley or Cilantro

Directions

This is SO easy...

If using canned corn and beans, dump both into a colander and rinse well. Drain until fairly dry, shaking the colander once or twice.

While they are draining, chop the onion, garlic and jalapeno into a fine dice. Put in medium bowl. Add olive oil and juice from an entire lime. Finely chop parsley, put in bowl.

Add corn and beans to bowl and toss everything together.

Use as a salsa over fish or chicken, toss with rice, use with tortilla chips, eat alone ---- always tasty and satisfying!

This will keep in the refrigerator for up to 2 days.
