Introduction

Homemade Chicken Vegetable Soup with Meatballs. This is a slimmed down version of my Mom's Meatball Soup. Homemade Chicken Vegetable Soup with Meatballs. This is a slimmed down version of my Mom's Meatball Soup.
Number of Servings: 6

Ingredients

    1 lb ground chicken breast, 1 medium yellow onion, 3 stalks celery, 4 carrots, 2 cloves garlic, 3 tbs ketchup, 1.25 c bread crumbs, 1 large egg, 1 cup parsley, 1 cup shredded cabbage.

Directions

Soup.. To Soup Pot add, cut up vegetables carrots and celery into bite size, dice 1/2 onion, 1/2c chopped parsley,add 1 cup shredded cabbage, 1/2 tbs salt and 1 chicken breast with bone in ( for added flavor )..
Add water leaving room for meatballs about 1/2 inch from top of pot. Cover and bring to boil, then reduce heat and add meatballs.

Meatballs.. in bowl add ground chicken breast, ketchup, egg, bread crumbs, 1/2 cup finely chopped parsley, 1/2 onion finely grated, 2 cloves finely chopped garlic 1/2 tbs salt, pepper to taste.
Mix together form into 18 meatballs.

Once soup begins to boil reduce heat and add meat balls. Cover and simmer 2 hours.

I remove the chicken breast and save for chicken salad.

    Delicious. I subbed ground turkey for the chicken. Added just a tad of EVOO to the - 8/23/20
