Introduction

Ingredients

    1 small Yellow Onion
    1 pkg McCormick Chili Seasoning Mix
    1 can Rotel
    (or diced tomatoes with green chilis-15oz)
    1 lb Jennie-O Extra Lean Ground Turkey
    1 pkg Jiffy corn muffin mix
    1 egg
    1 cup milk (2%)
    1 pkg frozen sweet yellow corn
    1 cup shredded cheddar cheese

Directions

Sautee minced onion
Add Turkey (or hamburger) and brown; then drain
Add McCormick seasoning packet and Rotel (or diced tomatoes-15oz); simmer 2-3 minutes
Pour mixture into baking dish
Stir in frozen corn and cheese
Prepare cornbread mix in mixing bowl; add Jiffy package, egg and milk. Stir briefly (5-10 seconds) to blend (do not overmix; lumps are ok)
Pour cornbread mixture on top of chili mixture (do not combine). Bake 35 minutes at 350 degrees, or until golden brown and cracked.
