Introduction

Ingredients

    1 2-pound chuck or beef tip roast
    1 packet onion soup mix
    1 can low fat cream of mushroom soup
    4 large carrots, quartered
    2 stalks of celery cut in 4 pieces
    1 onion, quartered
    2 medium russet potatoes, peeled and quartered

Directions

Put the potatoes, carrots, onion and celery in the bottom of a crock pot.

Lay the roast on top and sprinkle the onion soup over it. Carefully pour the can of mushroom soup over the roast as well.

Cook on low for 7-8 hours or on high for 4-5 hours.

    This sounds delicious! I do my potroast just like this only I spread brown spicy mustard on the roast and fresh rosemary. Idon't add the soups, and just let the natural juices flow! - 9/27/09

    Incredible!
    One of my favorite recipes, problem is it is soooooo good...1 serving is hard to stay with...lol...so I put a lot of veggies in mine. - 2/28/11

    Delicious! We were out of celery, so I added mushrooms for flavor. To thicken the gravy, I added some flour towards the end. We'll definitely make this again! - 1/25/11

    I used this as a basic guide but eliminated the soup and soup mix. I added a can of chicken broth and spices and it was delicious. Threw in an oz of dark chocolate at the end and gravy thickener. We had two meals from it. - 1/13/10
