Introduction

This rice has a rich, creamy texture as if cheese had been added to it. The olive oil, onion, and turmeric have nice, mild flavor that compliments seafood, pork, & chicken as well as most vegetables (especially stir-fry). Add 1/2 cup chopped cooked broccoli to it as a substitute to substantially higher calorie/saturated fat broccoli/cheese rice. Each serving is 1/2 cup. Ingredients

    1 Tbl olive oil
    1 med onion, chopped
    1 cup instant whole grain brown rice
    2 tsp ground turmeric
    1 1/4 tsp salt
    2 1/4 cup water

Directions

Heat olive oil in medium-sized sauce pot with lid, medium heat. Chop onion and saute in oil until clear (about 3 minutes). Mix in rice, turmeric, and salt until rice is thoroughly yellowed. Add water. Increase heat to high until water begins to boil. Reduce heat, cover pot, and let cook 15 minutes (do not stir or remove lid) or until rice is done. (For different rice, use the cooking time on package, then add 3-5 minutes.)

    I left out the salt to decrease the sodium amount and used white rice as well. Excellent side dish and so easy to make. - 2/16/10

    Good change from plain old boring white rice or traditional Spanish yellow rice. Less salty. I used white rice. The onions and olive oil give it a good flavor. I probably will make this again. Thanks for sharing! - 6/3/09
