Introduction

My husband had been bugging be to make fish so I started searching for recipes. I had already pulled out my basalmic vinegar and saw a few recipes with soy and then the idea just started flowing. It was very good. He even ate seconds. This makes 4 servings of 4 oz of salmon each. Great with rice and broccoli. My husband had been bugging be to make fish so I started searching for recipes. Ingredients

    -4 ,4 oz packs of salmon try to get them about the same thickness so they will cook evenly

    -1/8 c low sodium soy sauce like Kikkoman
    -1/8 c basalmic vinegar
    -1 t minced garlic or 2 cloves
    -2 T light brown sugar
    -1/4 c onion minced

Directions

When choosing your pieces of salmon to cook make sure they are about 1/2 in or less thick or it will be difficult to cook them from frozen.

Cook salmon in a nonstick large skillet in a small amount of olive oil spray(maybe about a teaspoon)over low/med. heat. Periodically turn them over to cook evenly. This should take about 6-7 minutes according to the package, but it depends on the thickness.

While the fish is cooking, mix the sauce ingredients: soy, basalmic, garlic, brown sugar and onion. When done, take it out, cover and set aside. Pour the sauce mix in the pan and stir it around to get all the drippings. Continue to stir a minute or two and then add the fish back in for one minute on each side to soak up some of the sauce. Serve with rice and broccoli (neither is included in the nutritional values).

Makes 4 servings.
