Ingredients

    1 tbsp Olive Oil
    2 cloves Garlic, minced
    1/2 tbsp Capers
    1 tsp dried Oregano
    1 tsp dried Rosemary
    1 can Diced Tomatoes, undrained
    1 can chickpeas, drained and rinsed
    1/2 cup Vegetable Broth
    1/2 cup Water

    1 cup Couscous

Directions

Saute garlic in olive oil until golden brown. Add capers, oregano, and rosemary and saute 1 minute. Add tomatoes, chickpeas, vegetable broth, and water and bring to a boil. Add couscous, stir, and remove from heat. Makes about 4 1-cup servings.

    Very Good
    I really enjoyed this recipe. It was easy to put together and flavorful. My husband and daughter did not enjoy it as much as I did. I will make it again for me sometime. - 9/9/12
