Ingredients

    1 large can pink salmon (418 g) bones removed
    1 egg
    10 whole wheat crackers, crushed
    2 tablespoons light mayonnaise
    1 small onion, diced
    dash of salt and pepper to taste

Directions

Debone salmon. Mix all ingredients together and form into 5 patties. Fry in skillet with tablespoon of olive oil, until golden brown.

    Very good base recipe. Add chopped green onions and bell pepper along with dash of lemon
    juice to kick it up.
