Introduction

Yummy and filling veggie wraps. You can use whatever veggies you want. This is great with sweet potato too. Yummy and filling veggie wraps. You can use whatever veggies you want. This is great with sweet potato too.
Number of Servings: 2

Ingredients

    - 2 Sundried Tomato & Basil Tortillas (or any flavor)
    - 4 cups of Spinach
    - 1 Portabello Mushroom
    - 1 Green Pepper
    - 1 Red Pepper
    - 1/2 Red Onion
    - 1 tsp Chili Pepper Paste
    - 1/4 cup lite Mayo
    - 1 clove of Garlic
    - 2tbsp Parmesan Cheese
    - .5 - 1tbsp Olive Oil

Directions

- Slice peppers, mushroom and onion into strips. Saute in a little olive oil for about 10 minutes. Add 1 cup of the spinach when you have about 3 minutes left. Add chili paste to taste.
- Meanwhile, add mayo, garlic, remaining 3 cups of spinach, and parmesan cheese to a food processor or blender and blend or pulse until smooth.
- Spread spinach mixture over tortillas and top with veggies. Fold into a wrap.

Makes 2 wraps.
