Introduction

I cogitated on this recipe for about a week.. I love creamy soups but have avoided them religiously for nearly a year... and I WANTED clam chowder... so I figured the best defense was to make up my own recipe... it was an instant hit! I love creamy soups but have avoided them religiously for nearly a year... and I WANTED clam chowder... so I figured the best defense was to make up my own recipe... it was an instant hit!
Number of Servings: 16

Ingredients

    1 md onion, chopped fine
    1 md stalk of celery, chopped fine
    3 slices turkey bacon, chopped up
    2 tbsp olive oil
    2 tbsp all purpose white flour
    ------------------------------------
    2 tbsp dried parsley flakes
    ½ tsp ground thyme
    1 tsp salt
    ½ tsp ground black pepper
    ------------------------------------
    2 cans chopped clams, not drained
    2 cans diced potatoes, drained
    2 cups skim milk
    --------------------------------------
    ½ cup dry nonfat milk
    ½ cup dry mashed potatoes

Directions

1.Combine onion, celery, turkey bacon, olive oil in large dutch oven and saute until vegetables are tender. Then add flour and stir until absorbed.
2.Add seasonings to mixture in pan and stir in.
3.Add undrained clams, drained potatoes and skim milk and heat through (about 5 mins).
4.Add nonfat dry milk and potatoes and cook on med-low heat until soup is thickened. Continue to cook for about 15-20 minutes on low to allow flavors to meld.
5.Enjoy!!

Makes about 16 1-cup servings.

    Good. I altered. No bacon, no canned potatoes. Reduce dry milk & potato flakes to 1/4c. Dice 1c fresh potatoes & carrots - add to mirepoix. Add 2c chicken stock to mirepoix & saute till tender. Increase pepper to 1tbsp. Add 2c more chicken stock after veggies are tender. Simmer 15 mins. Serve. - 1/27/10
