Ingredients

    1 c. buttermilk pancake mix
    1 egg
    1 tbsp applesauce
    3/4 to 1 c. apple cider
    1 tsp apple pie spice


Directions

Stir all ingredients together in medium mixing bowl. Spray non-stick skillet with butter flavor Pam. Pour 1/4 c. batter onto skillet. Turn pancakes when tops are covered with bubbles and edges are dry.

Any leftover batter can used up; cook up the pancakes, cool, then place 2-3 between wax paper and freeze. A minute and a half in the microwave makes a nice weekday breakfast!
