Introduction

I adapted this recipe from Westsoy Organic Unsweetened Soymilk, adding an extra egg white, Quinoa flour and walnuts to increase the Protein levels I adapted this recipe from Westsoy Organic Unsweetened Soymilk, adding an extra egg white, Quinoa flour and walnuts to increase the Protein levels
Number of Servings: 14

Ingredients

    l c All Purpose Flour
    1 c Quinoa Flour
    3/4 c Rolled Oats (I used Quaker Oats -1 min)
    1/2 c Brown sugar
    1 tbsp Baking powder
    l-l/4 tsp cinnamon
    l/2 tsp nutmed
    l/2 tsp salt
    2 eggs
    1 egg white
    l/4 c Canola Oil
    l/2 c Applesauce (unsweetened)
    1 c WestSoy Unsweetened Soymilk
    l/2 c chopped Walnuts

Directions

Preheat over to 400 degrees. Spay/oil tins or use paper cupcake liners. Blend together all dry ingredients in a a large mixing bowl. Combine all liquid ingredients in separate bowl. Gradually add this liquid to dry ingrediants. Blend slowly till thoroughly mixed. (Don't over mix) Fill cupcake tins 3/4 full. Bake at 400 degrees for 15 minutes. Remove from oven and cool. Makes 12-14 muffins
