Ingredients

1 Chopped Onion
2 crushed garlic cloves (omit or increase as preferred)
3 celery sticks
1lb Mushrooms (I use portabello)
1 cooking apple, sliced (any apple of choice will do)
2 table spoons fresh parsley
1 tea spoon carraway seeds
4oz cream cheese (Philadelphia or other)
2 table spoons dry sherry
2 beaten eggs (or eggbeaters)
8-10 sheets of Filo pastry
Directions
Fry onion for 5 mins, add garlic and celery & cook for further 5 mins.
Add mushrooms, apple, parsely & carraway seeds, stirring frequently.
Add sherry and seasoning & cook for 5 mins. Set mixture aside to cool.
Mix together cream cheese and eggs (to a smooth consistency). Drain mushroom mixture and stir into cheese mixture.
Grease a shallow 2.5 pint dish, line with 3-4 sheets of filo sprayed with oil.
Spoon in filling and cover with remaining pastry (remembering to spray oil between layers).
Cut a cross through pie to help layers rise. Cook for 40 -45 mins at 200 degrees C / 400 F
I always cover the pie with aluminum foil half way through to prevent it getting too brown.
Allow to stand for 5-10 mins before serving.
