Ingredients

    2 - 20 packages of Jennie O extra lean ground turkey
    1 - 14oz package of dry black beans
    2 - 10 oz cans of Rotel Diced Tomatoes and Green Chilies
    2 - medium onions
    1 - bell pepper
    1 - 0.25 cup minced garlic
    2 Tbsp EVOO
    10 - Cups of water
    2 tbsp Salt,
    1 Tbsp Black Pepper

    Hot sauce to taste

Directions

Makes 13 - 1.5 cups in a bowl

Rinse black beans, soak cover overnight with 6 cups of water in the refridgerator.

Next day -

Saute chopped onions, bell pepper and garlic in EVOO in a 6 quart stock pot. Add salt and pepper. Add black beans/water from the night before and 2 cans rotel tomatoes. Bring to a boil cover and simmer approximately 2 hours until beans are tender. Add water as needed.

Brown 40oz of extra lean ground turkey. Add to stock pot. Cover. Simmer 1 additional hour or as long as you want. Just remember to add water.

Serve. Add hot sauce to taste.
