Introduction

A bread that goes well with soup, as a sandwich, or best of all as toast. A bread that goes well with soup, as a sandwich, or best of all as toast.
Number of Servings: 32

Ingredients

    1 c. quick cook oats
    1/2 c. butter
    2 c. boiling water
    2 pkgs active dry yeast
    1 T. salt
    1/2 c. honey
    2 eggs
    6 1/4 to 7 1/4 flour
    1 egg, slightly beaten
    3 T. oats
    1 T. water

Directions

Combine oats, butter, water, honey, and salt. Cool to 105-115 and add yeast. Add 2 eggs and 2 1/2 cups flour. Mix until smooth. Stir in flour to make dough easy to handle. Turn out on floured surface and knead until elastic. Place in greased bowl, turn greased side up. Let rise until doubled. Punch down dough and divide into loves (2 large or 3 small). Shape into loaves and put in pans. Cover and let rise until doubled.

Mix beaten egg, water and brush over top of each loaf. Sprinkle oats on top. Bake at 350 for 25-35 minutes or until loaf sounds hollow. Remove from pans immediately.

Makes 32 slices in 2 large loaves, 16 slices each.
