What to do with leftovers? Delish!!
Makes a very filling meal. Add more broth (or less barley) for more soupy soup!!

Number of Servings: 6

Ingredients

    2 large parsnips,sliced
    3 medium carrots,sliced
    1 cups uncooked barley
    2 cloves garlic, finely chopped
    3 stalks celery, chopped
    at least 1 cup pieces of turkey
    0.5 cups gravy...or whatever you have left over
    2 cups chicken or turkey broth
    6 cups water
    oregano
    other spices to taste


Directions

Mix water and broth in a large pot.
Bring to boil then add raw barley.
Simmer 20 min.
Add gravy
Add root veggies and oregano, other spices
simmer a bit more, until veggies are no longer crunchy.
Add turkey and other rest of ingredients
Simmer until veggies are cooked to your taste.
