Introduction

Ingredients

    1 cup butter
    1-1/2 cups sugar
    3 eggs
    1-1/2 cups whole wheat flour
    1-1/2 cups oat bran
    1 tsp. baking soda dissolved in
    2 T. hot water
    1/2 tsp. cinnamon
    1/2 tsp. salt
    3 cups chopped pecans
    1/2 lb. chopped pitted dates
    1/2 lb. chopped candied pineapple
    1/2 lb. chopped dried mango slices
    1/2 lb. chopped dried apricots
    1 cup golden raisins
    1 cup craisins
    (1/2 lb. of any one of the fruits measures anywhere from 1-1/4 to 1-1/2 cups.)

Directions

Cream butter and sugar on high for a minute or two. On low speed add eggs one at a time, beating just until mixed. Mix in soda water. In a small bowl combine flour, oat bran, cinnamon and salt. Stir into batter. Remove from mixer and stir in nuts and fruits by hand. Drop by 1/8 cupfuls onto greased baking sheets. Bake at 375 for 10-12 minutes or until golden brown. Remove from pan and cool on counter top. Makes about 89 cookies.

    I love fruitcake! The only thing I dont like is the candied fruit so I suppose I could use another kind of dried fruit. Sound great! - 1/4/09

    These are really good! I'd eat too many if not careful. I deftinately reccomend as a good Christmas cookie. - 12/22/08
