Ingredients

2 Acorn Squash - Cut in half seeds scooped out and cleaned
1/4 Cup Quick Oats
6 Medium Mushrooms - Chopped
1 Tbsp. I can't believe it's not butter
1/4 Cup Scallions - Chopped
1 Tbsp. Olive Oil
1 Plum Tomato
1 oz. Blue Cheese Crumbles
1 tsp. Onion Powder
Salt & Pepper to taste
Directions
1. Cut acorn squash in half from top to bottom starting at stem. Slice a bit off the bottom of each half so that they sit flat and don't fall over. Scoop out all the seeds with a spoon.
2. In a small skillet over medium-high heat add the "I can't believe," mushrooms and scallions and saute until softened. Add oatmeal and stir until combined. Turn off heat.
3. Scoop the mixture into the squash then top with blue cheese, then tomatoes, onion power, salt and pepper.
4. Drizzle tops with Olive Oil and bake at 350 for 40-45 minutes.
*I serve this with roasted chicken breast or baked salmon. YUMMY!!!
