Ingredients

* Egg, fresh, 5 large
* Brown Rice, medium grain, 1.5 cup
* Mozzarella Cheese, part skim milk, 8 oz
* Spinach, cooked, 1 cup
* Half and Half Cream, .5 cup
* Red Ripe Tomatoes, 2 plum tomato
Directions
Beat one egg into 1.5 cups cooked brown rice and press into the bottom of a pie pan. Bake at 350 degrees for 10 minutes.
In a separate bowl, mix cooked spinach, 4 eggs well beaten, half and half, and shredded mozzzerella cheese.
Pour mixture into pie pan after rice crust is baked. Top with tomato slices and bake for 10 min. at 400 degrees. Then bake for another 50 minutes at 325 degrees until cooked through.
