Ingredients

For the Tzatziki:
1/2 cucumber, peeled, seeded, finely grated
1/2 c plain Greek yogurt
1 tbsp lemon juice (about 1/3 of a lemon, squeezed)
For the Chicken:
2 chicken breasts, well trimmed.
3 tbsp lemon juice (rest of the lemon)
2 tbsp olive oil
1 tbsp Greek seasoning (Penzey's Spices' is the best! Google it!)
2 whole wheat pitas, split
1 tomato, sliced
2 thin slices of red onion
Directions
Sauce:
Finely grate cucumber. Mix well with 1 tbsp lemon juice and Greek yogurt.
Chicken:
I trim my chicken really well of any cartilage or hanging on skin and then fillet the thick end. I cut the remainder of the breast about the same size as the filleted piece. I like to get 3-4 nice thin slices of chicken from each breast. Marinate in olive oil, lemon juice, Greek seasoning for 15-20 minutes.
Grill chicken in grill pan or normal grill til done. (just a few minutes, they'll cook fast!)
Assemble in 1 pita half: 1/4 chicken, 1/4 tomato, 1/4 onion, 1/4 sauce.
