Ingredients

    1/3 cup soy flour
    1/3 cup brown sugar
    1/3 cup cornmeal
    1 cup whole wheat flour
    1/4 cup wheat germ
    3/4 teaspoon salt
    1 cup almonds, ground
    1 teaspoon baking soda
    2 eggs, beaten
    1 cup plain yogurt
    1 teaspoon vanilla extract
    1/3 cup canola oil
    Grated peel of 1 large orange (about 1 tablespoon), optional
    1 cup dried cranberries (or mix of dried fruits to equal 1 cup, such as raisins, currants, dried apricots, etc)

Directions

Mix dry ingredients and dried fruit together in a large bowl. Combine liquid ingredients and orange peel, if using, and stir into dry ingredients just until moistened. Batter should be lumpy. Fill paper-lined muffin tins 2/3 full. Bake in preheated 350F oven for about 25 minutes. Makes 12 muffins.
