Introduction

This is my own take on the dish. I like it for lunch or maybe brunch on Sunday. I was inspired by the brunch I had a the Belagio last time my husband and I were in Vegas. Ingredients

    1/2 cup egg beaters
    1/2 cup black beans rinsed
    3 TBSP of salsa (I use store bought)
    1/8 cup of reduced fat shredded cheddar
    1 corn tortilla 6"
    1 TBSP reduced fat sour cream
    Hot sauce (optional: I use chulula)

Directions

This is a single serving recipe. I make them indiviually for each member of my family, but I don't see why the recipe can't be multiplied.

Throw the tortilla in the oven and turn it on 350 degrees.
In a pan ( I coat mine with cooking spray) scramble the egg beaters.
when almost done, add black beans and salsa. Cook until completely warm. Add cheese.
Take out your corn tortilla before it burns. Place on plate and dump contents of pan on top of the tortilla. Add the sour cream and hot sauce (if desired). Enjoy
