Introduction

This recipe was given to me by a co-worker and I've made it one of my favorites, especially in winter. It's hearty, healthy and makes me feel "worldly" with an exotic aroma. Serving sizes are liberal and filling.

Great Crock Pot dish.

Ingredients

    1 1/2 Teaspoons Veg or Canola oil
    1 lb Boneless Skinless Chicken Breast, cut in pieces
    1 cup large onion, chopped
    3 cloves garlic, minced
    1/2 tsp Salt
    1/2 tsp Cinnamon
    1/2 tsp Ground Cumin
    1/2 tsp Curry Powder
    1/2 tsp Ground Ginger
    1/2 tsp Crushed Red Pepper
    14 oz. (1 can) Stewed Tomatoes, undrained
    3/4 lb (2 med) Potatoes, cubed
    1 cupped (3 med) Carrots, sliced
    1/4 cup Raisins
    1 Tbsp. Lemon Juice

Directions

In a large saucepan, heat oil over medium high heat. Add chicken and brown on all sides (approx. 8. mins). Remove and set aside.

In same pan, saute onion and garlic until tender. Stir in all the seasonings. Stir approx. 30 seconds until fragrant.

Add tomatoes, potatoes, carrots, raisins. Heat until tomatoes just come to a boil.

Return chicken to pan. Cover tightly, reduce heat & simmer 45-55 min. or until vegetables are tender.

Stir in lemon juice right before serving.

Makes 4 servings. (1 - 1 1/2 cups each)
