Ingredients

    1/2 head Cabbage
    1 lb lean pork tenderloin, cooked and shredded
    1 can diced tomatoes
    Salt to taste
    Southwest seasoning
    2 cups chicken stock
    2 cups water

Directions

Cook pork in crockpot, oven, or bbq smoker, seasoned with southwest seasoning.

Chop 1/2 head cabbage
Add 2 cups of chicken stock to medium saucepan bring to boil, add chopped cabbage and southwest seasoning, cook for 10 minutes, add pork and canned tomatoes, cook until cabbage is tender

Makes 6, two cup servings

    I dbld this recipe & cooked pork (cvrd) over low heat in chix broth w/a few shakes of cumin. Used that broth + 2 cans. For tomatoes I used 1 Del Monte diced w/chilis, 1 Rotel diced w/lime & cilantro. Added to broth (before cabbage): more cumin, 1 clove chopped garlic & 1 shake chili powder. AMAZING. - 5/21/14

    Good way to use up extra cabbage and leftover pork! I used 1 tsp cumin, "Mexican" diced tomatoes (flavored with cumin, coriander, red pepper and jalapeno), and topped with with some chopped fresh cilantro leaves. Hit the spot on a chilly day! - 10/6/11
