Introduction

Ingredients

I cup Celery, sliced on a diagonal
I cup Carrot, sliced in rounds
2 cups Onion, sliced in long strips
1/2 cup Flat Leaf Italian parsley, fresh, chopped
2 Cans Diced Tomatoes with Juice
8 oz Mushrooms, fresh and sliced
4 cups Chicken Broth, canned,
6 cups Beef broth from Bouillon
2 cups Any type of rice, lentil, or grain, uncooked
Franks red Hot Sauce or Tabasco Sauce, about 6 healthy dashes, depending on how spicy you want it.
Salt and pepper To Taste
2 Tbsp Olive Oil, for sauteing onions
Directions
saute onions until soft, add mushrooms.
Saute until a little light brown, then add mushrooms, still, and wait for mushrooms to darken and cook a little bit.
Add everything but rice, Salt and pepper, and hot sauce.
Stir, cover, bring to boil, then cut to a simmer.
Add Rice.
Salt and Pepper to taste.
Add Hot sauce to taste--don't be afraid!!
It's best when cooked all day--you could brown the onions and mushrooms then add everything into a crock pot to come home to.
Add whatever vegetables you like--corm is also great to throw into this.
