Introduction

This is great with either fresh or frozen squash. Also leftovers make quick and easy breakfast! This is great with either fresh or frozen squash. Also leftovers make quick and easy breakfast!
Number of Servings: 10

Ingredients

    2 Cups sliced squash
    1 can reduced fat cream of chicken soup
    1 cup fat free sour cream(Breakstone's)
    1 large egg
    1 cup of Heart Smart baking mix
    1 vidalia onion chopped
    1 tsp Zaterain's blackened seasoning
    1/2 cup 2% Sharp Cheddar

Directions

Preheat oven to 350.
In a large bowl, beat one egg.
To this, add bisquick,soup and sour cream. Mix until combined.
To this add squash, onion, and blackened seasoning (may reduce seasoning to 1/2 tsp but add 1/2 tsp salt).
Mix in half of sharp cheddar.
Bake for 35 minutes. Remove and add remaining cheese. Bake additional 10 minutes. Serve warm.

    Incredible!
    I tripled the recipe - took much longer to cook. Use a shallow pan when making that much - bowls don't work. Everyone loved this. We will definitely eat this again and again! - 11/7/10
