Introduction
This is made mild because I do not like spicy food. However, to make this more similar to a Pakistani dish, add 1 teaspoon of crushed red pepper and 1 small chopped serrano pepper. Ingredients

1 1/2 teaspoons canola oil
3 Tablespoons onion, chopped
1 teaspoon garlic, chopped
1 medium tomato, 3/4 chopped & 1/4 sliced
2 medium eggs, beaten
salt & pepper to taste
Directions
Heat oil in pan. Saute onions until soft. Add garlic and saute for a couple of minutes. Add the 3/4 chopped tomato and saute for about 3-4 minutes, just till softened. Add salt and pepper to taste and then add eggs. Scramble and cook until eggs are cooked through.
Serve the remaining sliced tomato on the side to help with your vegetable servings for the day.
* To add some heat to it, add 1 teaspoon of crushed red pepper and 1 small chopped serrano pepper at the same time you add the tomato.
