Ingredients

4 C. Whole wheat flour
2 packs Active dry yeast
0.5 t. Baking soda
1.5 C. Cottage Cheese
0.5 C. Water
0.25 C. light brown sugar, packed
2 T. Butter, unsalted
2 t. Salt
2 Eggs
Directions
Mix 1.5 C. of the flour with yeast and baking soda.
Heat Next 5 ingredients till just warm (115-120 degrees), stirring constantly to melt the butter.
Add to dry mixture.
Add eggs.
Beat on low with hand mixer for 2 minutes.
Beat on high for 3 minutes.
By hand, stir in enough flour to make a moderately still dough.
Kneed till smooth, 8-10 Minutes.
Place in greased bowl, turn once.
Cover, let rise till nearly doubled.
Punch down.
Shape into rolls.
Put on greased pans and let double.
Preheat oven to 375
Cook for 12-15 minutes.
Makes 16 rolls.
