Ingredients

    1 envelope Knorr Leek recipe mix
    1 1/2 c milk
    1/2 c milk
    3 slightly beaten eggs
    1 1/2 c shredded Swiss cheese
    2 t dijon mustard
    salt and pepper
    5 slices of bacon fried and crumbled

    Crust:
    2 c flour
    2 t sugar
    1 t salt
    2/3 c canola oil
    3 T milk

Directions

In saucepan combine soup mix and 1 1/2 c milk. Cook until mixture boils. Remove from heat and cool slightly. Stir in rest of milk. In a separate bowl, combine eggs, cheese, mustard and salt and pepper. Slowly stir into soup mixture.

For pie crust:
Mix together flour, sugar and salt. In a separate bowl, whisk oil and milk. Pour wet mixture over dry mixture. Combine ingredients and pat into a 9 inch pie/quiche pan.

Spread bacon pieces on bottom of pie shell. Pour soup and egg mixture over.

Bake at 350 degrees F for 40-50 minutes or until a knife inserted in the middle comes out clean. Let stand for 10 min before serving.
