Number of Servings: 6

Ingredients

    1 can (19 oz) drained chickpeas
    1 can (19 oz) red kidney beans or black beans (drained)
    1 can (28 oz) tomatoes with herbs, spices, chopped
    1 can (10 oz) corn kernels
    2 carrots peeled and diced
    2 large cloves minced
    1 red onion
    1 cup ketchup
    1/4 cup liquid honey
    3 tbsp chili powder
    1/2 tsp cayene
    1 green pepper, diced
    1 red pepper, diced
    1 yellow pepper, diced

Directions

Combine ingredients in a slow cooker. Cook on low 8-10 hours or on high for 4-6 (then add peppers and cook on high for an additional 20-25 minutes).
Can top with a dollop of sour cream and grated cheddar.
