Ingredients

    1 can pineapple chunks in juice, drained (save juice for later0

    2 Tbs. rice vinegar
    2 Tbs. Soy Sauce
    1 Tbs. cornstarch
    Coarse salt and pepper
    2 TBS vegetable oil
    1 pork tenderloin (or use chicken) about 1 lb. thinly sliced
    6 scallions
    2 bell peppers (ribs and seeds removed)
    Cooked rice for serving

Directions

In small bowl stir together 1/3 cup pineapple juice, vinegar, soy sauce, cornstarch and water. Season Sauce with Salt & Pepper
In a skillet heat 1 tablespoon oil over med-high heat and cook the meat in two batches until well browned on one side (about 1 minute) - It will cook more later. Transfer to a plate.
Add onion & bell peppers. Cook until crisp tender for 6-8 minutes
Add meat with juices, and pinepple chunks.
Whisk sauce and add to skillet. Bring to a simmer and cook, stirring until warmed through.
Serve over rice.
