Ingredients

    1 1/4 lb pork roast
    1 tablespoon olive oil
    1 medium onion, sliced into rings
    2 cloves garlic, minced
    3 cups sauerkraut, drained
    3/4 cup apple juice
    1 1/2 teaspoons caraway seeds
    1/4 teaspoons dried thyme
    1/4 teaspoon salt
    1/4 teaspoon pepper
    1 cup unpeeled sliced red apple

Directions

In skillet, brown poast in oil.
In slow cooker, place 1/2 of the onion, garlic, sauerkraut, apple juice, caraway seed, thyme, salt and pepper. Add roast and then cover with remaining ingredients.
Cover and cook on low for 6-8 hours.
Serves 6

    Very Good
    I made this in a pressure cooker since I was pressed for time. I also left out the caraway because I don't like them and peeled the apple and chopped it together with the onion. Even my husband who isn't keen on fruit or kraut thought it was good! (I told him what it was after he ate it!) - 6/6/11
