Not too speedy but doesn't involve any oil or frying. Not too speedy but doesn't involve any oil or frying.

    1 chicken breast

    hint: (put between 2 pieces of plastic wrap and gently "beat" with tenderizer mallet or bottom of mug until it's uniform thickness on breast. This will help cook the meat evenly)

    2 cups of beef broth
    dash of back pepper
    1/2 cap of any Mrs. Dash seasoning


In a wok or sautee pan,combine broth and seasonings and heat until rolling boil.

Turn heat to medium.

Add chicken breast and cook about 6-7 minutes on each side or until knife inserted brings clear juices.

I like to slice the meat in bit esized pieces and place on a bed of mixed greens and top with your favorite salad dressing. I also add diced tomatoes, onions, etc to the salad greens for more flavor and color.
