Introduction

Number of Servings: 6

Ingredients

    Bell Pepper, any color, 1 diced
    Onion, 1 medium diced
    Chickpeas (garbanzo beans), 1 can rinsed
    Diced Tomatoes w/ Basil, Garlic- 2 cans
    Zuccini or other squash, 1/2 cup chopped
    Beef or veggie broth -- 2 cup (16 fl oz)
    Water, tap, 1 cup (8 fl oz)
    Garlic, 1T minced
    Fresh Basil, 2 tbsp chopped small

Directions

Drop everything into a crockpot and set to high for 5 hours. I often add whatever vegetables I need to use up. You may want to sub lower sodium items and/or dilute with additional water.

    Very good. Addition of som 'fines herbs' (thyme, parsley,etc.) is a pleasant addition. This definitely is on my make again list. - 11/13/09
