Introduction

A family favorite I've been working to make more healthy. These turn out great and I've cut the fat and calories in half. Two of these make an easy on the go breakfast for when I'm running out the door. A family favorite I've been working to make more healthy. Ingredients

    1 qt lowfat or fat free buttermilk
    5 1/2 cups Raisin Bran
    1/2 cup unsweetened applesauce
    1/4 cup plus 2 T oil
    7 T ground flax seed + 3 T water
    3 Eggs
    4 t baking soda
    2 t salt
    3 cups whole wheat flour
    2 cups all purpose flour
    2 cups sugar
    1 cup splenda
    1/2 cup raisins (optional)

Directions

Soak raisin bran in buttermilk for 15 minutes or until soft. Stir in remaining ingredients. Fill muffin cups half full. Bake 16 minutes or until toothpick inserted in the center comes out clean. Bake at 400 degrees.
