Introduction
My son loves nachos, and this is a bit healthier than those we get at Mexican restaurants.We share these for a yummy appetizer, or for lunch!
Garnish with low-fat or fat free sour cream and avocado. My son loves nachos, and this is a bit healthier than those we get at Mexican restaurants.

Ingredients

1 package (1 pound) 93% lean ground turkey
1 can (15 oz) your favorite pinto beans
1 can of sweet yellow corn, drained.
1/2 cup salsa
2 tbsp of finely chopped red onion
1/4 cup chopped red bell pepper
1 Jalapeno pepper, very finely chopped
3 tsp ground cumin
dash or two of ground pepper
1/3 cup of grated cheese ( I use Kirkland Mexican blend)
8 oz tortilla chips
Directions
Prep by chopping the onions and peppers. Brown onions, add ground turkey in skillet, until nicely browned as well. Drain any juices, and add beans, corn, salsa, peppers, cumin and ground pepper...stir until everything is warmed throughout.
Layer half the chips in a 9 inch pie pan (or comparable sized microwavable container) and add half of the warm mixture. Add the rest of the chips evenly over the top, add the rest of the mixture evenly over the chips, and sprinkle the cheese over the entire mixture.
Place in microwave for 1 to two minutes or until cheese is nicely melted.
You may also cook in a 350 degree oven for approximately 10 to 15 minutes.
Serve with slices of avocado over the nachos, and enjoy!
