Introduction

Stacey and I looked at a number of recipes before putting this together. It uses honey to sweeten it. Different fruits can be substituted for blueberries. Ingredients

    1 cup Whole Wheat Flour
    1/2 cup Flax Seed Meal (ground flax)
    1/2 cup Oats
    2 Eggs
    1/2 cup Honey
    1/2 tsp Baking Soda
    1/2 tsp Baking Powder
    1/2 tsp Salt
    1/2 tsp Vanilla Extract
    1/3 cup Canola Oil
    1/2 tsp nutmeg
    1/2 tsp cinnamon
    1 pint Blueberries, fresh

Directions

Mix together all ingrediants except blueberries until thoroughly mixed. Fold in blueberries. Spoon mixture into lightly grease muffin tins. Bake at 350 degrees for 15 minutes.

    Yummy. I added one ripe banana mashed up, 1/2 cup unsweetened applesauce and since I didn't have blueberries by the pint - I used 1 cup plus maybe a 1/4 cup more at the end to finish off the batter. I made them in minimuffin cups and it made 46 muffins. :) - 6/20/10

    These are VERY tasty. Moist. Delicious. I substituted applesauce for oil and it worked great.

    The ONLY negative??? WAY too many blueberries!!! Use half and you're good. They were difficult to eat because of how many blueberries were in them!
