Ingredients

    1 Medium Onion, chopped
    1 1/2 tsp. minced garlic
    1/4 cup fat free chicken broth (to sautee onion and garlic)
    1 (4 oz) can chopped green chilies
    4 cups fat free chicken broth
    1 can (10.5 oz) Rotel tomatoes (undrained)
    1 (16 oz) can pureed tomatoes (undrained)
    1 tsp chili powder
    1 tsp cumin
    1.5 cups diced, cooked white meat chicken breast
    1 tsp Mexican seasoning

Directions

In a large nonstick skillet, sautee onion and garlic in 1/4 cup chicken broth until soft.

Add the can of diced Rotel tomatoes, pureed tomatoes, chicken broth, green chilies, chili powder, Mexican seasoning, and cumin. Add chicken and heat to boiling. Reduce heat and simmer 20-30 minutes.

If you have some extra calories available, I like to use a multi-grain tortilla as a bowl. You can also add cheese, sour cream, avocado, or some lime juice!

Makes about 8 servings.
