Ingredients

    3 Lb. Chuck Roast (Trimmed of Fat)
    1/2 large brown onion, cut into chunks
    4 cloves Garlic, minced
    7 large carrots, cut into chunks
    7 Red potatoes, quartered
    1 Envelope Dry Onion Soup Mix
    1 1/2 cups Red Wine
    2 tsp salt
    1tsp freshly ground black pepper
    1 tablespoon Herbs de Provance (or substitute Thyme)
    3/4 cup water

Directions

Using a large slow cooker, put in cut carrots, potatoes, onions, garlic, and roast. Spinkle the roast with the onion soup mix, salt, pepper and herbs. Pour in water and wine. Cook on high 8 hours. Makes 8 servings.
