Introduction
A Traditional Filipino Stew made with beef. Notes: -The cheese can be removed or substituted for any melting cheese. Removing the cheese will cause the stew to be thinner as it is a thickening agent. -The Beef may be substituted for goats meat that has been marinated in vinegar, garlic, salt and pepper for at least 15 min. Ingredients

1000 grams - Beef cut into 3/4 inch chunks
350 grams - Braunschweiger (liver sausage)
5 -small Onions, diced
6 - plum tomatoes, halved then quartered.
1 cup - Tomato Sauce
3 - small Green bell peppers, large dice
3 - small Red Bell peppers, large dice
4 or 5 - Red hot chili peppers, Minced
3/4 cup - Gruyère Cheese, shredded (optional)
2 cups - Beef Stock (or water)
1/4 cup - Olive Oil
Directions
1. Heat the Oil in a casserole (or dutch oven) over medium/high heat.
2. Sauté the Garlic and Onions until the onions are golden brown and caramelized.
3. Add Tomatoes, red and green bell peppers, and chili peppers and cook until heated through and starting to soften.
4. Add the beef, tomato sauce, liver spread, and stock and bring to a boil.
5. Salt to taste and cover. Simmer until the beef is tender (at least 1 hour).
6. Add Cheese and continue to simmmer until the sauce thickens.
Serve over steamed rice.

you can also cut the calories by at least 25 calories per serving by using 6 slices of your favorite flavour of light laughing cow cheese (i'd suggest light creamy swiss to start with, but whatever floats your boat.) cutting the cheese out altogether drops it 50 calories per serving, but less taste
