Introduction

Yummy, spicy chicken salad. I love it on a bed of lettuce or stuffed in a pita with fresh spinach leaves. For a different twist I sometimes put in chopped apples, either walnuts or pecans and/or crumbled crispy turkey bacon! Yummy, spicy chicken salad. Ingredients

    2 large skinless chicken breasts, boiled
    1 cup each onions (i prefer red), celery and grapes (chop in half)
    2 jalapeno peppers, seeded and diced
    4 tbsp fat free mayo
    1 dash salt
    1 dash pepper (i also like to use creole seasoning at times instead of salt and pepper)
    1 cup (approx 2 large hardboiled eggs) diced

Directions

Boil chicken breasts till no longer pink and chop into medium size pieces and put in mixing bowl. Seed and dice jalapenos (wear gloves!) and put in bowl with chicken. Chop and add rest of veggies and eggs. Add salt and pepper or creole seasoning. Add mayo and blend well. Serve as desired.
